How to change the MText bullet style?

A - answer If you want to change the default bullet style in MText objects (dot/circle/spot), e.g. to a dash, you can switch the internal MText editor (e.g. to Notepad) and replace the "ü" character (WingDings font) of the original bullet.

Or, much easier, just switch off the original bullets and enter "-{Tab}" insted (press, not type the tab key). Similarly you can modify the numbered bullets.
