I need to dimension on the z-axis in my 3D drawings, but I don't know how to set my UCS to allow me for this.

You can do it either manually with the UCS command ot via the Dynamic UCS feature.

Hello dilibere, please find here enclosed a DWG file with explanations, hope this will be usefull.
In my files I have saved as :
G+ the UCS for dimensions , 01 the UCS for "YZ" plan , 01 the UCS for "XZ" plan so that I can easily have them back.
Lauch the command UCS and take a look at the different options, note that some options are not all here but under the first options like UCS --> 3 ( UCS by 3 points ) UCS --> O ( object ) , etc...
Use F1 to look at the help inside AutoCAD.
Try and find an old AutoCAD release like 2010 with the PDF book : AutoCAD_2010_acad_acr.pdf ( command reference = user manual ) because it's outside AutoCAD ( F1 help is inside AutoCAD and you can't switch from AutoCAD to F1 help.

try to use the origin ucs  then place it to where you want to put your dimension.
