When you open any drawing file in AutoCAD, it shows something in command menu. If you notice it properly or press F2 to get big view of command prompt (AutoCAD text window), you can see the very first commands while AutoCAD started.

It shows something similar to as follows:

Command: AECOPEN

Opening an AutoCAD 2004 format file.
Regenerating model.
Command:
Command: Initializing...
Menu unloaded successfully...

If you observe the Highlighted items above in BOLD letters, it shows the original drawing version.

In my view you cannot edit that after saving. Though you can export and save it to previous versions through AutoCAD.

If you right click in your middle of your screen or over your command line prompt> choose options> file tab> this is where all CAD defaults are. You can modify as needed.  I hope this is what your looking for.

Under the file menu, choose drawing properties. There is a Summary and Statistics tab.

If you want to reset these properties, I would guess the easiest way is to copy all objects to a new drawing.
