Isn't Inventor pretty particular about that type of thing?  Is there a "Save As" option in Inventor that would even allow you the ability to save to the Inventor 11 file format?

No, you cannot open a newer file version with an older program.

You can (or should be able to, at least) open a 2011 file, with 2012.
