There are a couple of ways to create new hatch patterns.

1. Edit an existing pattern definition.  See your acad.pat file.
2. Write a new hatch definition pattern yourself.  Instructions can be found on the Internet.
3. Depending on the version of AutoCAD you are using look in Express Tools for the SuperHatch command.

Is that enough information to get you started?

You will find the way to create your own new hatches in the PDF files loaded in your computer in ( for example ) :
C:\Program Files\Autodesk\ACADM 2008\Setup\Docs
there are a lot of documentations here ( in the old releases these were paper books that came with the CD of AutoCAD ).

In my french release I find :
acad_acg.pdf = guide de personalisation AutoCAD # customization guide

see also :
acad_acr.pdf = command reference ( in english )
acad_aug.pdf = manuel d'utilisation # user manual
acad_byw.pdf = conception de votre univert # 2D and 3D informations
acad_nfg.pdf = nouvelles fonctionnalites # new functionalities
etc.......
