Q - question

Globally switch MText masks on/off.

A - answer If you need to globally switch standard text masks for selected MText objects on or off (or toggle), you can use the LISP utility TMaskOnOff. You can download it from Download.

Load the LSP file with APPLOAD and run the command TMASKON, TMASKOFF or TMASKONOFF.

NB: for standard masks you cannot use the TEXTMASK and TEXTUNMASK commands

If you want to switch off (disable) the background fill for Texts, Leaders and Dimensions, you can use the UnMask utility - see Download.
