Yes, these can also be found by going to your "Customize" menu and select "Customize User Interface". From here you can view all command shortcuts and change them if you so desire.

Rendering is a skill that takes a lot of practice, and with all the variables involved, it would be impossible to cover everything here in the forum. But the first thing you need to do is determine which rendering engine you want to learn, (Mental Ray, Vray, Other). Then I would suggest that you get yourself a good book that goes in-depth, covering all the aspects of rendering. Amazon.com is a good place to look for books.
