If it is a block use bedit command then change it.

When I select the block and view the properties pane, I see Mtext at the top, and there is a field called Style. Changing the Style does nothing on this particular computer.

On another computer, this drawing appears just fine and this property changes the style appropriately. This makes me think that it must be an AutoCAD setting

Maybe it is an attribute definition of your block ?
when you select it and go to properties toolbar what do you show?.(ex:
Type of your file extentions  ect..)

I have a problem with one particular AutoCAD 2007 workstation. Other workstations seem to render the drawing just fine. On this one, the font properties don't work right.
