Hi,
we create our buildings in model space and then we dimension everything
in paper space....(i'm not a fan of this, but i have to do it this
way...company policy). So I have been running into an issue where I
will run a dimension from some line work to and architectural object
(i.e. a door) and it will be say 3'-0" actually, but the dim line tells
me it something like 400'-0" or something huge. But if I dimension from
a window to a door or a door to line work if gives me the correct
reading. Any clue as to how i can fix this?

check your dimstyle scale factor settings.
under the primary units tab check, measurement scale.
if your paperspace is 1" to 1' your scale factor will need to be the drawing scale.
if the paperspace is scaled to the modelspace put a 1 in the measurement scale box.
