Is there a way of creating a line type style that looks like a hedge in plan view or does anybody know where I could find one that has already been created.  Or further more is this something that just cannot be done??

It most likely can be done, depends what a "hedge" line looks like.
You can create complex linetypes using shp/shx files you create, and associated .lin files. I assume  a hedge linetype would be some bushy shape, repeated, without an intervening line?
 
If you have Express Tools installed, look into the "mkltype" command & features.

Thank you for getting back to me on this matter, I apologise for my late response though.

 
I was looking at a linetype of a bushy shape as you explianed and I will look into the express tools option.
