How do I change the Default Drawing Units to IPS instead of Metric?
I can change the drawing units with each new drawing each time, I know.
Do I generate templates that have the different Units and use the correct one for the project? Is that the accepted way?

Yes, using templates is the right way for this (you can also pick the predefined ACAD.DWT and ACADISO.DWT).
