Yo caddies!

My company is anal with 'parametrics'.
Our notes are inserted as user symbols, all pre-loaded to reflect model parameters, so we dont have to think much, LOL.
 
How, and or where can I enter say, a finish parameter, similar to the way you can while making a part file (physical, material entry is grayed out).
Is it even possible?
Would I have to create 'more' (ugh!) custom properties and populate each?
 
They want a finish to say for example (BTW exactly as shown):
 
1. FINISH: POWDERCOAT, SMOOTH
    SHERWIN WILLIAMS POWDURA GRAY
    EAT2-90035 (EPOXY) OR HAT-2-20257 (HYBRID) COLOR PMS 430
