I'm not certain why, but for some reason every time I plot to a specific plotter, my session of AutoCAD shuts down on me. I am using AutoCAD Mechanical 2012, and the plotter is a HP Design Jet 500. I double checked to make sure that I have the latest printer drives. Anyone else have this issue or know of a possible fix?

I run a HP DesignJet 500+ and AutoCAD 2012 and 13....so far no issues.
Did you try uninstalling then reinstalling the plotter?
