No, plotstyles are assigned to the whole drawings, not to viewports or layouts.

But you can still display the same object differently in individual layouts or viewports - you can either use Xrefs (objects from an xref can have a different plot style) or use layer settings dependent on a viewport (a new concept introduced in version 2008).
