For a global change use the MTEXTCF freeware utility (by J.Bastecky), downloadable from DL Download.

You can also use the right-click function "Remove formatting" in the MText editor to remove the formatting codes individually.

For MTEXTs, DIMENSIONs, MLEADERs and TABLEs - see the UnFormat utility - DL Download.

You can also use API to access the clean, pure text without formatting codes - e.g. in AutoLISP:

(getpropertyvalue (car (entsel)) "Text")
