This AutoCAD 2000 and 2000i issue was addressed by AutoCAD 2000i Service Pack 1.

You can also use an alternative text editor for mtext editor - e.g. NOTEPAD or MTedit (available on our page DL Download). You can switch the editor with the MTEXTED variable.

With Notepad you can correct the text codes to read like:
one {\Lunderlined} word.
