In the Open With dialog box there should be two sections: Recommended Programs and other Programs.  Did you look under Other Programs as well?

If you have multiple versions on your computer, the version that opens by default will be the last one you used. If you want 2010 to open as the default, and you don't have a desktop icon, go into your main Autocad 2010 directory and click on the Acad.exe to open the program. Now open a drawing, with the "Open" command, then save and close. Now 2010 will be the default.

You may want to make a shortcut to put on your desktop, so right click on the Acad.exe in your Autocad 2010 directory and choose "Create Shortcut". Then cut and paste to your desktop.
