I am using the ribbon toolbar & under annotate cannot find the DDEDIT command, how do I customise this panel please ?

You won't find it because in your version of AutoCAD it is an obsolete command.  And if you try typing it in at the command line you'll notice that the TEXTEDIT command is invoked instead.
