I am currently using auto cad 2012 for our water jet at work but I am having trouble trying to turn Text into an object to be able to cut it out, I have to convert the cad file over to another program called New Cam before I can put it into the water jet we have can anyone give me some idea on how to make the text into an object?

I disagree with the suggestion re: TEXTMASK.  Instead I would start with the Express Tools command Text Explode.  Then I would clean up the text where required (depends on the font you are using how much work this will involve) then I would use Pedit on the individual letters.
